Turns out I never was able to enable file sharing on the 7100, but it didn't matter. The big problem of "connection to server was unexpectedly broken" was fixed by reinstalling the system, and possibly by setting the IP addresses of each computer manually. When I did those things, and turned on appletalk on the 7100, and selected the ibook from the list, I was able to get the appleshare icon to appear on the 7100 desktop with the Hard disk of the ibook.
This worked without upgrading any software on the 7100. I only had the original system 8.1 components.

Some later versions of Open Transport are 1.2 (included, I think, with Mac OS 8.0) and 1.3 (included in Mac OS 8.1). Since I have the install images for Mac OS 8.1 on hand, I upgraded Open Transport to version1.3.So I am now running OS 7.6.1 successfully with Open Transport 1.3. I still have no idea of how a person could obtain O.T. 1.1.2 if that were _really_needed.
