How to set up for plain text in different languages

Continuing the language theme ... can anyone suggest websites
(or non-web resources) which
* explain how to set up email clients to send in plain text
* are not in English.

Reason for asking: we keep a log of failed requests to the
SZS autoresponder, and have noticed that the most common
reason for failure is that the email body contains up to
1000 characters -- multipart headers, HTML, etc. So far,
they have all been for the Spanish translation, and have
been sent from MS Outlook in HTML format.
