[EGG-RECIPE] Sliced Frittata with Picante Salsa

Sliced Frittata with Picante Salsa
                
Special Twist:  
        
Serve on a fried flour tortilla: 

Heat enough olive oil to cover 
the bottom of an 8-inch sauté pan. 

Add a tortilla to hot oil and cook 
until desired degree of color is 
achieved. 

Turn tortilla over and cook the 
other side. 

Blot excess oil from tortilla and serve.


Ingredients:
        
  6 Eggs
3/4 TBS Fresh basil-Chopped
3/4 TBS Fresh thyme-Chopped
3/4 TBS Fresh cilantro-Chopped
1/4 Cup Parmesan cheese-Freshly grated
3 TBS Olive oil
1 Jar (16 oz-wt) Traditional Picante Salsa
         (or 2 cups of your own fresh salsa)

Directions:


Break the eggs in a bowl and beat them 
slightly with a fork. 

Beat in the basil, thyme, cilantro and 
Parmesan cheese. 

Season with salt and pepper.

Heat oil in large nonstick frying pan. 

Wait until oil is hot but not smoking 
before adding the frittata batter. 

Cook, without stirring until the frittata 
is puffed and golden brown underneath.

Take a large plate, place it upside down 
over the pan, holding it firmly with oven 
mitts, turn the pan and the frittata over 
onto it. 

Slide the frittata back into the pan and 
continue cooking for 3-4 minutes more or 
until it is golden brown on the second 
side. 

Remove from the heat and let cool completely.

To assemble the dish, cut the frittata into 
thin slices. Place them in a serving bowl 
and toss lightly with the picante sauce. 

Serve hot, room temperature or chilled if you desire.
                
    Ingredient Substitutions
                
Just use fresh cilantro in place of mixed herbs.

Frittata can be made a day ahead and refrigerated.
