The ones not in the Address Book are limited to a finite number, and will get replaced automatically as new ones are added. In addition, the suggestions will appear in "most used" order rather than straight alphabetic; the more you use it, the better the suggestions become. If you want to erase a particular entry that isn't in the Address Book (e.g. An incorrect spelling), define a contact for that exact mail address, and then delete the contact from the Address Book.
