With Exim you can manage domains, redirections, out of office replys, 
mailboxes, alias, etc.... nearly everything what you need for "normal" 
Admintasks

Exim itself does not have any GUI mode, there is just one configuration file. 
You can employ some GUI based editor to change the configuration.

There exists some „vexim“, but I'm not sure if it's tailored to manage the 
contents of a specific configuration (users, domains, …) or if it is more 
general.
