I'm going to install GNU Plot to see its capabilities.
Meanwhile I have some code that produces an R script to make a chart.

I too have an interest in that, and a little experience working with gnuplot interfaces. 
It is not too hard to put together a simple but functional gnuplot wrapper. 
Let me know if that is something you want to work on, and I might just pitch in.
 
What would be really awesome is a graphing factor ui element.
