Polyester has little stretch, but you will distort the panels as you tension them during assembly and that will allow some "apparent" lengthening (greater longitudinal than lateral tension). Triton, the Russian folding boat builder, uses pretty hard PVC strips in way of the stringers and keelson to protect the lightweight PVC hull. Works excellently!! Good luck!
