Crock Pot Morning Casserole

Just layer hashbrowns, ham, cheese and eggs in the crockpot for a hot, homemade
breakfast ready and waiting when you wake up.
INGREDIENTS
* 1 32 oz bag frozen hash brown potatoes
* 1 lb bacon diced, cooked and drained or 1 lb. cooked ham, cubed
* 1 medium onion, diced
* 1 green bell pepper, diced
* 1 1/2 cups shredded cheddar or Monterey Jack cheese
* 12 eggs
* 1 cup milk
* 1 tsp salt
* 1 tsp pepper or to taste
DIRECTIONS
Place a layer of frozen potatoes in slow cooker, followed by a layer of bacon,
onions, green pepper and cheese. Repeat layering process two or three more
times, ending with a layer of cheese. Beat eggs, milk, salt and pepper
together. Pour over crock pot mixture, cover, turn on low heat and cook 10-12
hours.
Notes: Instead of using onions and bell pepper, you may use a vegetable of your
choice.
Number of Servings: 6-8
