1 egg
5 T. ketchup, divided
2 T. prepared mustard
1/2 c. dry bread crumbs
2 T. onion soup mix
1/4 t. salt
1/4 t. pepper
1 lb. ground beef
1/4 c. sugar
2 T. brown sugar
2 T. cider vinegar
In a bowl, lightly beat the egg. Add 2 T. of ketchup, mustard, bread crumbs,
soup mix, salt and pepper. Crumble beef over mixture and mix well. Shape into
an oval loaf. Place in a shallow 1 qt. microwave safe dish; cover with waxed
paper. Microwave on high for 11 to 12 min. or
until meat is brown, rotating a half turn once; drain. In a sm. bowl, combine
the sugars, vinegar and remaining ketchup; drizzle over the meat loaf. Cover
and microwave on high for 3 to 5 min. or until meat is no longer pink. Let meat
loaf stand for 10 in. before slicing. Makes 4
servings.
