I'm using PowerQuest's DriveImage 2.0, and am VERY impressed with it so far. It creates an entire hard disk image, so you can re-install your entire hard disk in about 20 minutes... plus it supports ext2 partitions! It also has a feature to back up to Zip drives in particular. I would highly recommend this package!
