I haven't used any of them enough to say one way or the other. I really want to get into Ajax/JSON soon, and hopefully I will get some free time in the near future to play with them.

I like the idea of REST but haven't seen enough examples one or the other to sway me yet.

I really like the idea of simple web services (ie - not SOAP) to do stuff with, SOAP really fell off the the Simple part of SOAP a long time ago and is now owned by big business in a bad way (IMO). If I see one more WS-* acronym I may just cry.
