Normally, the outgoing MTA will set a Date: header in the outgoing
message, but it seems preferable to copy the Date: header from the
original post.

I can't tell if that's what you're asking for, but there are only two
options that make sense: copy the original Date: or set the current
Date:. Unless there is argument to the contrary, I'll go for copying the
original.
