I think it may be due to space as well. There were lots of fine epistles around by the time the bishops decided on the Canon. Of course, they never anticipated there being arguments about theological issues only listed in the writings that weren't in the Canon, or they just might have included them all. If you have the four volume set of the Liturgy of the Hours, the ancient prayers sometimes known as the Office (Lauds, Matins, Vespers, Compline, etc.) you can find many of these wonderful letters from the ancient Church fathers included.
