After-School Cupcakes
Prepare a box of chocolate cake mix according to the box directions and spoon
batter about three fourths full into 24 paper-lined muffin cups.
In a bowl, using an electric mixer, beat one 8 ounce package of softened cream
cheese and one fourth cup sugar and 1 egg until nice and fluffy.
Spoon in either one cup of butterscotch chips or chocolate chips and 1/2 cup of
chopped walnuts.
Spoon a heaping teaspoon of this cream cheese mixture into the center of the
batter in the paper liners.
Bake at 350 degrees F. for 15-20 minutes until a toothpick inserted in the
center comes out clean.
When cool, frost with a can of chocolate fudge or cream cheese frosting.
Note: Nuts may be eliminated. The filling sinks into the center of the cupcakes.
