If I install the beta onto a system, I'm assuming that getting that same
system to RHEL 5.3 final when it comes out would be as simple as a yum
upgrade command.  Is this a safe assumption or not the case?  Thanks.

Nope.

There is no supported way to upgrade from beta to final afaik.
If/when it breaks, you get to keep all shards.
