Check out the screen capture quartz composer plugin that Vade has on his site, 
its not full blown syphon but it is a good way to get animata output into 
another application that supports quartz composer playback.

I had a similar need and my remedy was to use the animatap5 renderer for
processing.  The general workflow is that you develop your scene in animata
and render the scene with processing (full screen with no window decorations
is easy to do).  Should work on a mac but I use Linux.
