WEIGHT WATCHERS MAC & CHEESE SALAD
3 ounces elbow macaroni 3/4 cup plain nonfat yogurt 2 tablespoons reduced-calorie mayonnaise. 1 tablespoon Dijon-style mustard 1 teaspoon celery seeds 1/4 teaspoon salt 1/4 teaspoon freshly ground black pepper 8 ounces skinless boneless cooked chicken breast, cut into 1/2" cubes. 2 large plum tomatoes, diced. 1 cup minced red onions 1/2 cup shredded carrot 1/2 cup chopped celery In large pot of boiling water, cook macaroni 8 to 10 minutes, until tender. Drain, disgarding liquid; rinse. Drain again; set aside. In large bowl, with wire whisk, combine yogurt, mayonnaise, mustard, celery seeds, salt, and pepper, blending to mix well. Add chicken, tomatoes, onions carrots, celery, and reserved macaroni; toss to combine. Serve immediately or refrigerate, covered, until chilled.
