i believe that redhat linux is available for the 7100, as well as several other 
variants
including free ones like openbsd, freebsd, netbsd, etc.  try the .org websites for each
os, they usually have a list of supported machines.  some don't support the 7100, 
because
they are a bit odd in a couple of ways and some groups just haven't done the work to 
port
to that platform.  most of the .org sites are very, very usefull and have links to 
lots of
support pages with info on things like firewalls and router software etc.  for those 
that
don't officially support the 7100, some of the variants do have patches for the 7100 
but
frequently not all of the peripherals are supported or well supported, for instance you
may be limited to unacelerated text display (no graphics) or have to run it with a
"terminal" for i/o, which isn't a big deal for a router or firewall that usually runs
headless anyway.
