Port forwards, unless you're load balancing, are designed to forward 1 source port to 1 destination port. Setting up lvs is a whole different game.
For this stuff you might want to try something other than macos. i've personally never used any macos based fw/router/nat applications, so take my one side as just info. There doesn't seem to be a port for OpenBSD for the x100 series powermacs. the macppc port is for newworld machines and the mac68k port is for 68k based boxes. Same goes for NetBSD. FreeBSD does not have a super useful port at this time. You might want to check out MkLinux at http://www.mklinux.org/ as it does support the x100 series machines. You can find the Getting Started information at http://www.mklinux.org/getting_started/index.html Once that's all setup you can use ipchains/tables.
