Given you have the printer physcally attached to the XP box (either by a serial-to-serial cable, a parallel-to-serial adapter, a USB-to-serial adapter or whatever you need), you should be able to use it from any Windows version, even if it isn't listed. I'd choose the nearest older model that is in the printers list. Other way would be to download and install Adobe's standard PostScript printer drivers, and set them to PostScript level 1 (the evel used by the Personal LW series, I think), and the memory and resolution of the printer.
Please take note that you can not build a parallel to mini-DIN cable without any kind of electronic, because the Macintosh's mini-DIN port is a RS-422 serial port. You could, however, build a cable that links a mini-DIN to a PC serial port. I say that because if you have a parallel-to-serial converter, you will have to tell Windows XP that the printer is attached to the LPT1: port, where if you have a plain serial-to-serial cable (which matches more closely your description), the printer will be attached to a COM port (ussually COM1: or COM2:). If you have any problems setting it up, write me off-list.
