It's not unusual to like an older version of an operating system. It's one of the
fudamental reasons why System 6 survives as heartily as it does.
You give up some modern conveniences, but if you aren't using your Mac for them it matters little.
OS 7.6.1 is quite robust and is a great choice for your needs.
