i believe that good sets are borne from much experience - a chef goes to the
market, some funky ingredient becomes the glint in his eye, and presto, it's
added to the mix later on at dinner, he instinctly knows it gonna be bad-ass
course, people eatin' will be like, " damn, this food is the bomb, have you
got somethang else we can wrap our mouths around? " chef doesn't read the
recipes any more........he feels it.
