No I don't think you can live adjust easy and yes, you'd need DJ software for that.
But from what Arturo says he doesn't need to do that? I could be getting it wrong but I understood he was going to record the vinyl bits either side and then "glue" them together with the digital file "post production"? If that's so there's lots of things you could use but I thought of Audacity cos it's free and easily available and once you've installed it it's a useful tool you'll probably end up using for other things.
