Oh man, your timing couldn't be any worse. you will just miss the 5 days off event @ the Melkweg (http://www.5daysoff.nl/artiesten.htm) but you could hop on the train to Gent in Belgium (takes about 3 hours) and catch "10 days off" there (the "mother" event) (http://www.dma.be/p/5voor12/10DO2002/UK/10daysoff_eng.htm)
You could also check out K-Hand and Peel Seamus & DJ Aardvärck (Delsin) @ Paradiso on the 26th. For the rest I wouldn't really know. Can't help you with coffeeshops either, since I'm not from A'dam myself, but my best bet would be to just go to any coffeeshop. Buy what you want, hope for nice weather and chill out in the Vondelpark.
