(313) Administrivia: How do you set up 'Plain Text' as default for 313 in mail clients?

I thought I might add to the FAQ how to configure mail clients to send
plain text to 313. Does anyone know how to do this in:

Apple's OSX Mail program
Eudora (on Mac and/or PC)

I don't have access to those programs....
