Very good question.

I actually put together some coffees for various restaurants, beginning 
many years ago and continuing into the early 90s (which some people 
would also consider many years ago <smile>).

I never roasted though; that's a major variable I wouldn't get involved 
in, and the restaurants didn't seem to want to be involved in.

We found small suppliers with good reputations for consistency, and went 
from there.  To keep our blends exclusive we blended from different 
suppliers.  (I don't think any of our supplies roasted themselves 
either.)

I suppose this could have been a serious business for me, but it never 
was.

Sorry, I no longer have the detailed records we kept <frown>.  They were 
on computers that were taken out of service quite some time ago.
