I have a course outline and my lecture notes :) The syllabus is mostly grading, contact, and scheduling info as well as the course description and objectives.
WRT booting, I cover grub, inittab, and the rc scripts... I usually have a homework assignment asking them to document the boot process, i.e. what is the default runlevel, what is the first script that is run, what directory are the rc scripts run from, etc. Sometimes they just stare at me with those twirly spiral cartoon things in their eyes when I try to explain how the live CDs work (a bad combination of linux arbitrary path mounting + chroot + ramdrive = confused newbie students), but I try to explain the boot process from BIOS to shell.
