If you scrub only the live data, total scrub time becomes a
function of used space as opposed to total space.  But the
main reason for asking was that I was thinking of situations
where your appliance is not used but venti is.

The illusion of a perfect array-of-bytes abstraction can't
always be sustained in any case.
