You can use offline folders, or briefcases too for synchronizing.

Windows XP *Professional* also allows you to utilize 'disk quotas"
You can set a person's profile folder with a disk quota which can be
adjusted later.  This doesn't require partitioning.

You will also have finer permisions control with Professional so you
restric access to certain folders.
