I don't know the answer to that, but if that were me I know I wouldn't send
from my work email address.  I would use an online service, such as gmail or
web email, mine is Rogers.Yahoo, then I would delete internet history.  I
will be interested in hearing answers to your question.  But I would think
that  might depend how the company's email system is set up.  I do recall
when working for the government, I had deleted an important email and also
emptied the trash, but was able to recover it later in Outlook. (with IT's
help of course, but once shown how to do it, was not hard at all)

Does anyone know if a company you work for can actually SEE your 
incoming and outgoing email messages? Is it possible to go into your 
actual messages and see what you've sent or received?

Scenario: an employee sends their resume to a company from their work 
email address. The employee immediately deletes the message from 
their 'sent' folder and their 'deleted' folder upon completion. Any 
items in the 'trash' are also immediately deleted. Is there a way for 
an employer to see that email?
