MS includes Windows Live Mail with Win7 (instead of OE).  Actually you 
can download it free from the Microsoft site.  It's part of a suite 
called Windows Live Essentials - but you can choose to "only" download 
the mail part if you want.  Here's a link for the download:

I don't know how similar WLM is to OE since I've never used it - but it 
"is" a stand alone email program that stores messages on your computer 
(unlike a web based email client like Gmail).
I use and like Thunderbird.  Thunderbird is very configurable - I 
imagine there is a way to keep your contacts in the left pane.  You can 
definitely put a Contacts button on any of the toolbars.

Also, I've installed Office 2003 (Office XP) on 2 Win7 systems without 
problems.  What errors are you getting when you try to install?
