I have tested the LaTeX export for CJK documents,
using both ChiTeX and CJK for LaTeX.
The tex file can be compiled by ChiTeX without
any changes and generated correct dvi & ps.
In CJK for LaTeX, I have to add
\usepackage{CJK}
and
\begin{CJK*}{Bg5}{aming}
\end{CJK*}
between \begin{document} .. \end{document}
as shown in the attachment.
In short, LaTeX export WORKS for CJK
(or, at least Big5 Chinese).
