Don't know how Linux copes, but a pair of dual-head cards, one in AGP and one PCI, or a triple and a dual/single, seems a reasonable way to go to get performance. Maybe use the tripe on AGP to drive projectors, and PCI for console. There are some cards coming out in both AGP and PCI-X form (QID is one) but I realise QID drivers for Linux may not be available yet (and have had no reports on whether the Windows ones are reliable).
