i'm not sure how much it is feasible to implement though, through GPS
vehicle can be tracked once cab is booked. can it be make it screen reader
friendly on both IOS and Android?

The most inaccessible feature of Uber app is to adjust the location by
dragging the places in the maps itself. Further, locating the contact/call
driver after the ride has been booked is also not very strait forward.
Finally, very soon Uber is going to roll out a new feature, wherein there
would be an option of a direct chat between the rider and driver till both
meet. I hope Uber cares about accessibility in the new app with this
feature.
Note, all of the above comments applicable to the Android OS.
