Google and Amazon pay are only the completely accessible UPI apps on iOS unfortunately. Phonepay can be managed for some extant but I'm not happy with its interface. Paytm is totally inaccessible! On google pay mostly it will be a problem with banks and nothing major issue though.

I believe the menu sits at the right bottom in the iOS app. Once you open it the process is generally intuitive, it has been a while I activated it and so I did not remember each detail. If something is stopping you then please let me know. @Aniruddha - Agreed Google Pay is better in terms of one-to-one transfer, but Amazon Pay has got more services which are accessible, I personally face issues with many of GPay's services like electricity, gas bill, etc. which work very well in Amazon Pay, and Amazon pay's more consistent too.
