If you wish to disconnect GPRS, one of the solutions is to select off-line mode and then revert to general. Emoze can be used for accessing emails instead of Nokia mail.

Pressing and holding the end call button usually brings-up the message whether you want to disconnect the GPRS and you will be disconnected up on choosing yes. If that does not work, then simply restart the phone. I am not familiar with the E72 menu layers, but you may wish to check your connectivity settings to make sure that you are connected only when needed.
