If you are using JAWS 12 and wish to use Office 2007, then activate
“Use Virtual Ribbon Menu” option to make the Office 2007 ribbon
structure simpler. After activating, you can navigate as same as in
Office 2003. Just follow this prompts to do the same:

1.      Open “JAWS menu” by pressing INSERT+J.
2.      Select “Utilities” and press ENTER.
3.      Select “Settings Center” and press ENTER.
4.      Press TAB and navigate to the “Tree view” section.
5.      Select “Miscellaneous” and press RIGHT ARROW to expand that section.
6.      Press DOWN ARROW and select “Use Virtual Ribbon Menu” checkbox and
press SPACEBAR to check it.
7.      Finally, press ENTER to close the Settings Center dialog box.

Explore this option and feel the change. You will find that all
individual options in ribbon are disappeared and same options are
shown under the various categories. After activating this checkbox,
you won’t be able to navigate with the TAB key. You need to use four
arrow keys and ENTER key to activate the option. If you are not
satisfied with the change, then clear the box “Use Virtual Ribbon
Menu” with SPACEBAR.

The same applies to Office 2010 as well.
