The phone toggles between speaker on and off based your ear being pressed on the phone. It takes a little getting used to but you will get it if you play with your ear's position.
I think there is also an option in settings (mostly Call or Phone settings) where you can set the default speaker value. It would normally be set to Auto. Handset and Speaker should be the other options.
