So far I haven't hurd that any volunteer organization is providing any
special coaching for the persons with visual impairment  through usual
classes, therefore possibility of imparting coaching through skype is
least! However any other member who has such knowledge regarding the
possibility of taking CAT/Bank PO coaching may share the information.
As far as I remember there is no such special coaching center which
provides special coaching for other competitive examinations such as
civil services, judicial services, SSC and UGC NET/JRF.
There are practical difficulties for a vi candidate while taking
coaching from usual coaching centers, if your note taking speed is
slow, you can not jotdown the dictation, you can not understand what
has been described over blackboard. More over it is very difficult
that coaching centers provide their notes in accessible format,
therefore you will have to manage as usual as you manage your studies
being student in a normal university. However you can talk the
coaching center in advance regarding your difficulties and limitations
and your way of perceiveing the things.
I believe that if your educational background is much strong, self
study is good recipe for cracking any kind of competitive exam!
