I fully agree.

However, I have discovered that a large part of my audience is at 800x600,
and another large part is at 1024x768, so I need to make my site usable for
both.

Personally, I hate dynanically sized sites. From a consumer's point of
view, I have my monitor running at 1600x1200, and I hate sites with text
that stretches across the whole page. It's often too hard to read. From
a designer's point of view, I dislike losing another element of control
over how the site looks (and there's few enough of them to begin with!).
Also, I *like* white space in a design (or whatever colour you're using
for the background).
