If you go to google.com and type "windows 2000 server data recovery" you'll get a bunch of companies that do this, on the right-hand side, listed as "sponsored links".  If it's a little file that hasn't been overwritten, and this happens from time-to-time, it may be cheaper/faster/easier to use diskeeper, a steal at $250 for one server.  You can download a trial version which I think can restore files up to 32kb or something.
