I would look over the various monitoring tool vendors and see what they monitor as a baseline.
I really like Quest's Spotlight series. It only cost $1000.00 per server/processor and gives you a ton of AD information. NetPro's product is also really good. One process I would add to your monitoring is the LSASS Process.
