The answer to your first question is to enable auditing on the server(s) in
question, but that won't help expo facto.
The answer to the second is third party undelete software, but on any
reasonably busy file server that's not gonna work either.
Or you could just go back to your last backup tape before the deletion was
done. You DO have backups, right? Or at least a current resume?
