Or what we have done, since we cannot allot more than one server for this right now, is setup several different GPOs, and we disable them while we test patches on one OU, and enable them on the other OUs when we are ready. One thing you have to remember is if you disable a GPO with SUS settings, the computers will go back to what they had before, leaving the potential for users to continually back out of patch updates. What we do is setup two GPOs - one that enables it, and one that disables it, and use whichever one is appropriate. This way, no matter what you are doing, the user has no control over Automatic Updates, which is the goal in our case.

You can also run multiple SUS servers and approve different patches for different groups of machines.

You must approve the updates before a client can download them.  If you don't want SPs being pushed out then just don't approve it.

I don't think I would want SP's just being deployed to my server especially as I would be caught in a predicament when all my servers stop functioning the next day.

I don't mind the patches and hotfixes for the moment.
