A lot of the info I found was for "in place" upgrades and like you we are migrating to new machines so this looks like an excellent resource.

I'm in a similiar environment. I used chapter 9 and 10 of the domain migration cookbook. My Windows Server 2003 boxes were new hardware so I was able to do everything during business hours. Mark Minasi's book is also a pretty good resource.
