Depending on how comfortable you are with Windows 2000 already, you may look into the Microsoft Class 2665B: Introducing Microsoft Windows Server 2003 to Windows 2000 Server IT Professionals.
I took that class about a year ago (it's a 2 day seminar) and it proved pretty helpful in getting an overview of the changes W2k3 brings to the table. Granted, one will not be an "expert" on W2K3 after attending this but for my purposes it was enough to get me going.
