My documents is not setup that way for offline files.  You must open My
Documents and then click on Tools Folder Option and then click on the
offline files tab and enable offline files.  Once enabled, My Documents
is automatically set to be available offline and you can not take it
off.  That is if it is pointing to a network share.

try right clicking My Documents and choosing Properties - change the
target to be the NETWORK version of the directory you want i.e.
\\fileservername\usershare$ and OK it - then right click again and
chose "make available offline"
