The Exchange guys tell me the single best thing you can do to tune your
Exchange deployment is run ExBPA, and listen to what it has to tell you.
It will make recommendations like the ones you suggest below and
countless other settings you might never think of.
The added bonus is that it also finds potential problems before they are
serious problems.

Nice thing about Exchange is that it is largely self-tuning for
mainstream implementations. For large density/high-volume
implementations there are some tweaks and best practices you'll want to
follow. Most of them are documented in the best practices and
troubleshooting guides:

One of the suggestions you're missing (off the top of my head) is how
you intend to handle storage. One of the biggest and easiest
performance boosts can be realized with proper storage integration.
Details are dependent on what type of storage you intend to use.
