One thing the guides do not say (not in my understanding anyway) is that if you upgrade your forest and you have domains with child domains; additionally you are using the upgrade window to introduce new hardware and new server names with the intention of removing the old hardware\servers afterwards – Don’t forget to redo your DNS delegations if applicable as this is a bit of a gotcha.
