As Eric mentioned, check for other services that may be running on the box (WINS, DHCP, File Shares, scripts, scheduled tasks). Also if you have any internal applications double check to make sure none of them reference the DC by name or IP if they use AD for authentication/authorization. As a test before you demote it may be worthwhile to shut the DC off and see if anything breaks the next day. That way if you missed anything you can turn it back on and fix whatever issues popped up.
